One of my favorite things to do is to find phenomenal dishes from around the country and try to personalize them (usually by making them a bit more healthy). I am not nearly culinarily (is that even a word?) creative enough to think of these dishes on my own but I sure know how to take a good thing and copy it.
As I continue to travel and eat across this great land, I will be posting my attempts to recreate and adapt these great dishes here. The bent will always be on making them home kitchen and fitness friendly while sharing my experiences with those I love.
